Ingredients

  • 1/2 cup of NotMilk™
  • 1/3 cup of blueberries
  • 3 tbsp of aquafaba
  • 1 1/2 tbsp of sugar
  • 1/3 tsp of apple cider vinegar
  • 1 cup of wheat flour
  • 1/2 tsp of baking powder
  • 1/3 tsp of Salt
  • 1/2 tbsp of Coconut oil
  • 1 tsp of vanilla essence
  • 2 tbsp of maple syrup

Steps

  1. In a bowl beat the aquafaba with the sugar at medium speed until a firm and consistent meringue forms. Set aside.
  2. In a medium bowl, mix the flour, baking powder and salt.
  3. In another bowl, mix the coconut oil, NotMilk™, vinegar and vanilla extract until a soft mixture forms.
  4. Combine the blueberries with the wet and dry mixture in a bowl. Beat for 3 minutes at medium speed or until a smooth mixture forms (set aside 2 spoons of blueberries for decoration).
  5. Fold the meringue in until a smotth mixture forms.
  6. Heat the pan on medium heat for 3 minutes, add 1/2 spoon of oil, wait 1 minute and add 2 spoons of the pancake mix.
  7. Cook the pancake for 5 minutes, or until the surface starts to bubble.
  8. Flip the pancake and cook for another 3 minutes or until it's golden brown and detaches easily from the pan.
  9. Take the pancake out and repeat with the rest of the mixture.
  10. Serve a tower of pancakes with the maple syrup and blueberries on top!
