Ingredients
Dough
- 1 1/4 cup of NotMilk™
- 1/2 cup of coconut oil
- 1/2 cup of sugar
- 2 tbsp of instant yeast
- 3 1/2 cups of wheat flour
- 1 tsp of salt
Filling
- 1/3 cup of vegetable oil
- 3 tbsp of cinnamon powder
- 1 cup of sugar
Frosting
- 1 tbsp of NotMilk™
- 1/3 cup of powdered sugar
Steps
Dough
- Add the NotMilk™, sugar and yeast into the mixing bowl. Mix with a spoon and let it rest for 15 minutes until the yeast it's activated.
- Add the water, flour and salt to the activated yeast. Blend well until a dough is formed.
- Knead for 10 minutes until smooth and soft.
- Form a ball, place in a bowl and cover with plastic wrap.
- Ferment for 30 minutes in a warm place (90ºF) keeping out of direct sunlight.
- After the 30 minutes, roll into a 1cm thick rectangle.
Filling
- Mix the cinnamon powder and brown sugar in a bowl.
- Brush the dough with half of the vegetable oil mixture and sprinkle the cinnamon and sugar mix on top.
- Roll and cut into 6 portions.
- Place rolls onto a pan. Cover with a lid and let it ferment for another 30 minutes in a warm place.
- Brush again with the rest of the vegetable oil.
- Bake at 350ºF for 20 minutes.
Frosting
- Mix the powdered sugar, lemon juice and NotMilk™ in a bowl.
- Decorate with the frosting once it's out of the oven.
