This holiday season give the cows a vacation thanks to NotMilk™. These Gingerbread muffins topped with a sweet lemon glaze are a must! No really, go make them and then you’ll understand.

Ingredients

For Muffins:

  • 1 1/4 cup of NotMilk™ Whole
  • 1/4 cup of vegetable oil
  • 2 tbsp of maple syrup
  • 2 tbsp of molasses
  • 1 1/2 tsp of ground ginger 
  • 1 tsp of cinnamon powder
  • 1 tsp of vanilla essence
  • 2 3/4 cup of wheat flour
  • 1/4 tsp of salt
  • 2 tsp of baking powder 
  • 1/3 tsp of baking soda

Lemon Glaze:

  • 2 1/2 cup of powder sugar
  • 1 1/2 tbsp of lemon juice

 

Steps

  1. Preheat the oven to 390ºF.
  2. In a bowl, add the NotMilk™, vegetable oil, maple syrup, molasses, fresh ginger, sugar, ground ginger, cinnamon and vanilla extract.
  3. Mix everything with a hand mixer.
  4. Mix the wheat flour, salt, baking powder, baking soda and add to the mix.
  5. Pour the mixture into the muffin molds.
  6. Bake for 20 minutes.
  7. For the glaze: mix the lemon juice and powdered sugar.
  8. Pour the glaze over the muffin.

You can make this recipe with either NotMiIk™ 2% Reduced Fat or Whole. Enjoy it!
