A delicious NotChicken™ Pesto Sandwich
Ingredients
For the Pesto
3 cloves garlic
½ cup basil leaves
½ cup parsley
¼ cup pine nuts
1 tbsp olive oil
¾ cup Not Co Milk
½ tsp salt
¼ cup nutritional yeast
For the Sandwich
2 ciabatta rolls, cut in half
4 Not Chicken Patties
4 tbsp olive oil
1 tomato, thinly sliced
1 cup arugula
1 tbsp balsamic vinegar
Steps
For the Pesto
Add the garlic, basil, parsley, pine nuts, and oil to a blender or food processor. Pulse until very fine. Add the milk and nutritional yeast and pulse until mixed well.
For the Sandwich
Cook the Not Chicken Patties as directed on packages or until golden brown. While they are cooking, toast the bread and make the pesto.
Heat the olive oil over medium heat in a sauce pan. Add the sliced side of each ciabatta roll face down into the oil.
Toast until golden or about 3-4 minutes. Remove and set aside
When the patties are done cooking, remove and start assembling sandwich.
Start with bottom of each roll, add 1-2 tablespoon of pesto, then tomatoes, chicken patties, 1-2 tablespoons more of pesto, arugula, balsamic vinegar, and the top bun.
